RECIPE APPLE CRUMBLE PIE

1 frozen pie crust
6 to 7 tart apples
1/2 c. sugar
1 tsp. cinnamon
1/4 tsp. nutmeg
CRUMBLE TOPPING:
3/4 c. flour
1/2 c. sugar
1/2 c. firm butter
Preheat oven to 450 degrees. Do not peel apples. Cut into slices approximately 1/2 inch thick. Put slices in crust. Stir together sugar, cinnamon, and nutmeg. Sprinkle over apples. Top with crumble topping. Bake 30 to 40 minutes until edge is golden brown and apples are tender.Can be made in pizza pan or cake pan or pie pan. Does not hold together in slices like regular apple pie.

RECIPE OVEN FRIED CAJUN CHICKEN

Ingredients

1 frying chicken or 6 breasts or 6 leg thigh quarters
1 cup flour
black pepper and garlic powder (for sprinkling)
Creole seasoning
paprika
cayenne pepper
1/2 cup butter
Preparation 
Preheat oven to 425°F.
Pat chicken dry with a clean paper towel and sprinkle with garlic powder and Creole seasoning.
In a Ziploc bag, combine 1 cup flour, 1/4 teaspoon black pepper, a pinch of cayenne pepper (optional - adjust heat as desired), 1/2 teaspoon paprika and 1/2 teaspoon Creole seasoning. Close bag and mix well.
Shake chicken in the bag with flour and seasonings. Line a 9x13 inch glass baking dish with foil. Add butter and place in oven until it sizzles. Place chicken in dish, skin side down.
Bake 30 minutes; reduce heat to 325°F degrees and bake 35-45 minutes longer or until chicken is cooked through (this depends upon the weight of the chicken). It will be a beautiful golden brown and very tender when done.

RECIPE GREEN BEAN CASSEROLE

 
  
Ingredients
30 ounces green beans, canned, drained *
10 3/4 ounces Cream of Mushroom Soup
3/4 cup milk
2 3/4 ounces French-fried onions
1/8 teaspoon pepper
 
 Preparation
Combine green beans, soup, milk, pepper and 1/2 of the onions; gently stir together to mix well. Spread mixture in a 1 1/2 to 2 quart ovenproof casserole dish.Bake at 350°F for 25 minutes. Top with remaining onions. Bake 5 minutes more.
Cooks Note: *May substitute 18 ounces frozen cut green beans, thawed and drained.

ASIAN BEEF & NOODLES

1-1/4 pounds ground beef
2 packages (3 ounces each) Oriental-flavored ramen noodles, separated
2 cups frozen oriental vegetable mixture
1/2 teaspoon freshly ground ginger
3 tablespoons green onion, cut in 1" pieces
1 medium onion, chopped
1 tablespoon garlic, minced
1 teaspoon soy sauce
In skillet, brown ground beef over medium heat 8 to 10 minutes. Add garlic and onions after beef has been browning 5 minutes. Remove beef with slotted spoon; season with seasoning packet from noodles.Place noodles in skillet. Add vegetable mixture, 2 cups water or beef broth, soy sauce, ginger and seasoning packet. Bring to a boil, reduce heat, cover and simmer several minutes or until noodles are done.
Add beef to skillet once more, cook 1-2 additional minutes.
American Chop Suey Variation: Instead of ramen noodles and flavoring packet, substitute leftover or pre-cooked pasta and one beef bouillon cube. Omit ginger and soy sauce. Add one 8-12 oz can diced tomatoes, tomato soup, or tomato sauce to skillet after beef has browned; continue as above. Serve wth microwave-melted cheese, or sprinkle with grated parmesan.

BAKED FISH FILLETS

1 (12 oz.) pkg. frozen fish fillets or fresh (flounder trout, redfish, sole, etc.)
1/3 c. mayonnaise
1/4 c. grated Parmesan cheese
2 tbsp. fine dry bread crumbs (I use Italian)
Line a very shallow baking pan with foil; grease foil. Place fillets in one layer in pan. Spread with mayonnaise; sprinkle with cheese, then with crumbs. Bake in a preheated 375 degree oven until lightly browned and fish flakes easily and looks opaque when tested with a fork, 25 minutes. Makes 2 or 3 servings.

BACON AND SCRAMBLED EGGS

INGREDIENTS:
Bac on
Eggs
Butter
Salt and pepper
Put a paper towel on a plate. Place a piece of bacon on the towel. Cover the bacon with paper towel and set aside. Crack an egg into a bowl. Add 1 teaspoon of water. Scramble egg with a fork. Pour scrambled egg into a greased bowl. Microwave bacon for 1 1/2 minutes. Microwave egg for 1 minute.

OLD TIME YELLOW CREAM CAKE

1 cup sugar
1 cup cream
2 tsp. baking powder
2 eggs, separated
1 tsp. lemon or vanilla extract
2 cups flour
a pinch of salt
In a large mixing bowl, beat egg whites until peaks form and set aside. Mix together remaining ingredients and fold in the beaten egg whites.Bake in a preheated 350°F oven in a greased 9x15-inch baking pan until golden brown and a toothpick inserted in center comes out clean.
Frost with confectioners sugar icing or serve with fruit in syrup and topped with ice cream or whipped cream.
This is a good cake for slicing into sections to make layered desserts. In a large glass container, stack a layer of the sliced cake, a layer of fruit and syrup (such as strawberries), a layer of ice cream or Cool Whip, etc. Layer decoratively so that it can be seen from the outside of the container and the dessert may be used as a centerpiece. Refrigerate until ready to use (at least 1 hour).
